1 small red chili, thinly sliced (adjust to taste)

1 tablespoon soy sauce

1 teaspoon rice vinegar or lime juice

1 teaspoon chili garlic sauce or Sriracha

1 teaspoon brown sugar

½ teaspoon grated ginger

1 spring onion, sliced (white and green parts separated)

A handful of shredded carrot or cabbage (optional crunch!)

Fresh cilantro or basil, for garnish

Crushed peanuts or sesame seeds (optional, but amazing)

A wedge of lime, to finish
