Spicy Noodl for One


Ingredients

  • 100g rice noodles or ramen noodles

  • 1 tablespoon sesame oil (or any neutral oil)

  • 2 cloves garlic, finely minced

  • 1 small red chili, thinly sliced (adjust to taste)

  • 1 tablespoon soy sauce

  • 1 teaspoon rice vinegar or lime juice

  • 1 teaspoon chili garlic sauce or Sriracha

  • 1 teaspoon brown sugar

  • ½ teaspoon grated ginger

  • 1 spring onion, sliced (white and green parts separated)

  • A handful of shredded carrot or cabbage (optional crunch!)

  • Fresh cilantro or basil, for garnish

  • Crushed peanuts or sesame seeds (optional, but amazing)

  • A wedge of lime, to finish
